Have you ever cooked a goose?!


Question: Ron was a bit rude wasn't he? Glad he is not coming to my house for xmas.

He is right though - assuming it is a farmed goose then I prick mine all over to let the enormous amount of rendered fat to run out into the tray. Empty it out half way through cooking or it can flood your oven. Keep it - it is the best fat you could ever roast your potatoes in (my great granny used to keep it for rubbing on your chest when you had a cold but the less said about that the better).

I was given a wild Canada goose last week from the local shoot but it would have been impossible to roast as it has no fat at all. It would have been as dry as a tramps towel. If you get any variety of wild goose then best to casserole it.

Yes, domestic goose is very good but wild ones are nasty...we call them SKY CARP. I have heard that some people can make them taste good but haven't come across a way to do it myself.

Yes. Use a rack as it is very greasy to me and that helps. I like it better than Turkey

KEEP THEM ELEVATED IN THE PAN WHEN COOKING BECAUSE THEY ARE ALL GREASE AND FEATHERS, BUT ARE VERY TASTY . BUY THEM ALREADY DE-FEATHERED OF COARSE.

Yes. A special treat when I was young & learning (old now but still learning). I made it for Christmas Dinner and everyone enjoyed it and there were no complaints - it was a family dinner and not always politically correct so if they handn't enjoyed it they would have said so, and probably during the meal. I had Better Homes & Gardens cookbook and I followed the instructions. It was very good but I found it labour intensive between constantly removing the rendered fat and alternately basting as well.
