What is that white stuff around dry salami?!


Question: So I bought an italian dry salami today at the store- I used it in a pasta salad I made mmmmmm. I had never bought one before and just used salami already sliced; I felt daring this time haha. But ya, I took that white stuff surrounding the salami off and it smelled horrible!! (No it wasn't a bad salami, I just didn't care for the way it smelled) Was it some salt thing? And is it ok to rinse the salami after taking that white stuff off? Tastes great though =)

It is most likely the casing. Depending on what it is cased in, it can develop a mold. Wipe it down you should be just fine
Always remove the casing from salami before using.

Old world style salami are generally covered with a fine white mold. This is considered extremely desirable characteristic in both European and San Francisco style dry-cured products.

Yes i agree with you its very delicious and the white stuff called lard and when you buy a dried salami you should remove the outer part .mmmmm
