I'd recommend you start by *helping* him. Let him teach you how to make a few things. But I can give you a very easy, reliable meal. This is "Rice Krispie Chicken" and was taught to me by my mother-in-law a number of years ago.
You need:
-Chicken. I normally buy 1 or 2 packages of breasts only.
-Rice Krispies.
-Butter. (Margarine might work, but I've never tried) 1 stick is enough unless you're making a ton of chicken.
First, melt the butter. I use the microwave. Put the butter (unwrapped) in a microwave safe bowl and microwave for about 1.5 minutes on a medium setting. Do NOT just do it on high -- you won't be happy. If it's not melted by then, stir with fork and do another 30 seconds at a time, always on a middle power setting.
In the meantime, clean the chicken. There's probably a lot of excess fat on it. I trim with a knife anything I wouldn't want to eat. If you get breasts, look for sharp bones and remove them. The wish bone usually is broken off and embedded in the breast, so I carefully remove it.
Then, put about a cup of Rice Krispies in a ziplock. Crush them to powder. You can use a rolling pin if you have one, or anything else. I've used a glass (be careful not to break it) and even a can of canned vegetables.
Now, take a piece of chicken. Dip it in the butter. Then put it in the ziplock with the Rice Krispies and coat the piece as thoroughly as you can. Arrange in a pan, "eating side" up. Repeat with the rest of the pieces.
Stick it in the oven at 350 degrees F for 90 minutes.

This is about the easiest "real" cooking you can do. It's kind of like Shake and Bake, but different. Very difficult to mess up, as long as you use a pan designed to go into the oven.
Chicken or beef stir fry -
buy the chix or beef and cut it up. stir fry it. then add a package or two of frozen stirfry veggies or fresh cut ones until hot. Then add stir fry sauce - super easy! Go to trader joes if you have one - they sell the sauce and the veggies.
Chicken pot pie:
boil chicken, potatoes and veggies (onion, carrot, celery) all in separate pots. put into bowl & mix with cream of mushroom soup. Put into frozen pie crust, cover with another and brush with milk. cover with foil, bake for 45 at 375. remove foil to brown crust. delicious!
also check out Rachel Ray 30 mins. meals - get a book - super easy recipies!
Check out the recipes on Campbell's soup cans. They are really simple and tasty!
Sometime the smallest things make the big difference. what about a nice spaghetti with a side salad and some garlic bread, and if your old enough some wine!
Get a George Foreman. You can cook anything on there very quickly and it's always good.
You could make pasta salad just take the things that he likes or makes and make them your self you can fine so easy repices on google... and i am not saying your a dummy but you could buy the book cooking for dummies that might help. Or you could ask you dad for help since he has been cooking all those years
Fajitas are easy...
SLices of beed sauted in olive oil..add sliced green and red bell peppers, sliced white onions and also a package of fajita seasonings..simmer until cooked and wrap in tortillas with cheese, salsa and guacamole...
You can also grill salmon...add crushed garlic and salt and pepper with olive oil and bake at 350 for 1/2 hour.
Serve with couscous...you can find this at your local grocery store..it comes in a box...its somthing different that you can serve instead of rice...the instructions on the box are super easy.
Grilled chicken breasts-
season chicken filles with salt and pepper and grill..add a slice of cheese and tomato on top and serve on a toasted bread roll or without it...you can serve this with grilled corn...open up a can of corn and saute with chopped white onions...and a touch of butter...
there are many easy recipes where you only have to add one simple ingredient such as garlic or onions and it will make a big difference in flavor...good luck and try not to think about it so hard.....somtimes the more you think about it, the harder it seems...
Cooking for 2 days also helps out alot...casseroles, spagetti, etc. would be dishes that can last for 2 days...
Stay easy, at first. Invest in a Big Red Betty Crocker Cookbook. (about $20)
It'll show you how to make things as simple as french toast.
There is a reference section at the begining of each chapter outlining methods and terms.
Once you get the hang of a kitchen, you can add more and more things to your repertoire. -I'd suggest starting with spaghetti with canned sauce and chicken and rice.
Most importantly, follow recipes and keep practicing. Once you get the hang of it, cooking can be very rewarding.
Hot Dogs
Macaroni and Cheese
Grilled Cheese sandwiches
Soup, take it out of the can, empty it into a microwaveable bowl and add either water or milk according to the directions, stir it all together until it is stirred really good, and heat it on high in the microwave for three minutes.

watch food tv or watch your boyfriend cook. There are only 2 ways to learn- watching and trial and error. I like watching good eats, since Alton Brown goes over the recipes step by step in detail, and most of them are easy to make. Betty Crocker and the Joy of cooking are both great cookbooks- not only you'll find recipes, they also have information about ingredients and how to combine them. I really like "the joy of cooking."
For now, try some kind of pasta or lasagna. Soup is also easy to make, but it takes longer.
Tomato and mozzarella sandwiches with fresh spinach or basil made in a sandwich press (panini press) are extremely easy to make and delicious. Ham and cheese melts are also easy.
