It's kind of a tricky question. You need to know what your guests will enjoy since you're cooking for them. The "safest" meal to serve is most likely the chicken but to me, that's "standard" fare.
Fish is risky because not everyone likes fish. Not to mention that the kind of fish that you get can make a huge difference too. For grilling, I like fresh wild salmon steaks and never buy Atlantic salmon. Steaks are easier to cook than fillets because each piece is the same thickness throughout. Atlantic salmon is farm raised and just doesn't have the flavor or texture of wild.
Leg of lamb is risky because some people find lamb too gamey for their taste.
Personally, I would like the leg of lamb, roasted, with garlic mashed yukon potatoes and homemade mushroom gravy.
