That's not their stomach. The body contains "tomalley," the lobster's liver. Tomalley turns green when cooked, and many consider it a delicacy.

the stomach is not green it is the liver which is a bodies filter which is why it is green because lobsters are bottom feeders and scavengers they will eat what ever comes to them.
