Natural cheese?!

Question: when a package of cheese says "natural cheese" on it what does that mean? my guess is something to do with the fact that it is actually made from milk, as opposed to that plastic like stff they used to feed us in school. Thank you!

It means that the cheese is true 'cheese' and not processed with other additives.

Cheese is traditionally just milk, salt and a coagulant. The coagulant was originally made with animal rennet, but nowadays can also be found made with vegetable or microbial based coagulants.

The most common 'natural cheese' that most people are familiar with is American Block Cheddar, typically made in sizes of 40lbs and upwards before being broken down for sale. Gouda and Swiss (aka, Emmenthal) are also common in most grocers these days, and while some will utilize egg lysozome as a preservative are still considered 'natural,' unlike Boursin and other cheese spreads.

Cheese can be made with additional spices and such in a manner that was first introduced by the Danish and still be regarded as 'natural.'

it means that not only is it made from milk but that it also has no flavors added (like ham, garlic, spices)
