Why is there a hole in the middle of the bagel?!
Answers: Saturday Review spent a lot of time with facetious answers to this back in the 60s but the real reason is like the reason for the hole in the doughnut; it eliminates the problem of uncooked dough in the middle.
I assume to make it cook more evenly
It cooks faster because the heat takes a long time to get to the middle of the dough if it doesn't have a hole.
