What, in your opinion, is the very tastiest gourmet cheese, and why?!

Question: I love cheese. My very favorite is Jarlsberg, mainly because my mom gave me Jarlsberg to eat when I was little, so now its flavor and texture remind me of my childhood.

Why do you love your favorite cheese? Best answer will be the one that persuades me to try your fave if I haven't already, or that makes me want to try some more if I have. Please be specific about the name so I can get the exact same kind!
