What are some easy-to-make, afterschool meals and/or snacks?!
And usually I'll eat a sandwich or crackers or chips, but I want something that's easy to make and satisfying too.

Sandwiches are my favorites and always will be! Just spice up regular, boring sandwiches. I like maple syrup, bananas, and melted chocolate chips with peanut butter. Or a grilled turkey and cheese sandwich.
Another easy idea is French toast or pancakes. They are especially easy if you make a whole bunch at one time and then freeze them. Just pop a few pieces of French toast or a couple pancakes into the microwave for 45 seconds or a minute and they are hot and ready to eat!
I also like cold pizza. Same rule goes here, heat up a frozen pizza one day and the refrigerate in in slices. You can eat it straight from the fridge or heat it up in the microwave or oven.
Or you can always use this hunger as a learning experience! I taught my 18 year old brother how to make cookies just last week=] It was kind of funny because I had to get all the ingredients and bowls, mixers, etc out for him because he obviously didn't know where to find ANYTHING in the kitchen of his own house=] Start out small with maybe some muffins or cookies and if you enjoy that then start baking and cooking more complex things. Your family will be impressed!

Frozen Fruit blended with Milk, Juice, or Yogurt.

Fresh Veggies and Hummus(you can make hummus easy or buy it made)
pizza rolls, chicken nugguts, any microwave meal, fruit or veggies and dip. My son even had pop tarts sometimes.
I'm wondering what kinds of food that you like. My favs are veggie dishes, made with raw broccoli and cauliflower with some ranch dip. Then there's apples and bananas, good dipped in chocolate syrup. If you want something heartier, there are those Hot Pockets you keep in the freezer and it takes just a couple of minutes in the microwave. They're hearty. You can get some small cans of Chef Boyardee spaghetti, beefaroni, etc, and takes just a minute and a half in the microwave. Small frozen pizzas are handy in the freezer 'til you're ready to eat them. Check out the grocery store sometime and you'll find all kinds of good stuff. :)

Try this baked pita bread chip recipe from my magazine. First, cut pita bread into triangular chip-sized pieces. Then, coat with olive oil and sprinkle with spices, such as- oregano, salt, pepper, or garlic salt. Preheat oven to 360 degrees and bake for 15-20 minutes or until brown. Serve with salsa, hummus, or white bean dip for a perfect Mediterranean snack!
Lemon Chicken with Ginger Noodles.
Ginger Noodles:
Saute finely chopped garlic and grated ginger in olive oil. Add a bit of soy sauce and cooked pasta.
Lemon Chicken:
Saute in oil onion, red bell pepper and chicken fillet strips. Then add any veggie you want, lemon juice, and soy sauce. Season with pepper.
It's really easy, but very filling. Hope you like it!
