Refrigerating chocolates?!


Question: I've sworn off all sweets for the time being to avoid weight gain during the holidays but I received some Godivas as a gift. Can I refrigerate or even freeze them to stay fresh? I know I should probably just give them away, but they're my only Christmas gift, and I want to keep them for when my Marine returns home. We love Godivas!

Since you have a good chocolate, Godiva!, you can refrigerate them and they should stay fresh for up to six months. I certainly wouldn't recommend freezing them!

You can freeze or refrigerate chocolate, but with one warning: that can make the cocoa butter separate and go to the surface of the chocolate, giving it a gray-white coating. This is more likely to happen with a high-fat chocolate like Godiva. It's still perfectly edible, but it might taste a little grainy and it won't look as pretty.
