stuffed manicotti. when I was younger, my non-Italian mother made a meat version in which she stuffed the noodles with a meatball mixture, covered them in spaghetti sauce and baked them. my current Italian mother-in-law would never make a meat manicotti. she only makes the cheese variety which I think is the best.
