Any plant base oil breaks down during cooking, better oils to cook with are saturated fat. Contrary to what people think saturated fats are good for you in moderation, especially medium chain fatty acid like coconut oil. Don't cook or eat transfats like shortening unless you want to die young.

Olive oil is so much better than safflower and canola it is not funny. Many oils like conola increase estrogen levels, not a good thing for people with hormone balancing and metabolic issues.

Olive oil has a lower smoke point than canola but is a much better tasting oil. Use canola for high heat cooking and/or when you don't want the flavor of olive oil in your dish. Use olive oil for any Italian, middle eastern, or Mediterranean dishes at a minimum

I do not agree with your friend.
I do not use Canola oil at all for any reason it is made from the Rape plant which is toxic, so toxic bugs will not eat it. The process used to make it into oil is suppose to change that. I know this is going against current thought, but I just want to put the best I can in my body.

Extra Virgin Olive Oil ~cold pressed
Grapeseed
Coconut Oil/Butter
Walnut Oil (can't be cooked with, only for salads)

Olive oil does taste better while cooking. But moderation is best because it is like any other oil, fattening. This may sound silly, but olive oil is also really good for your nail beds/cuticles.
