Baking betty crocker cookies WITHOUT eggs?!

Question: so we're completely out of eggs and we can't go out and buy them at this time. we have the betty crocker sugar cookie mix at home and you have to mix it with 1 stick of butter (which we have) and 1 egg (which we're out of). so would the cookies still taste good without the egg?
also, what is the egg's purpose anyway?
if it is possible to bake those cookies without at egg, what's a good substitute?

oh and has anyone used 2 tablespoons of arrowroot flour as a substitute for 1 egg?

has it been successful for sugar cookies?

is the taste different?

thanks!
