Easy dinner ideas?!
I feel like there is NOTHING to eat. Lately, I've just been having a can of vegetables or something, but it's not enough, and I end up snacking all night long. I'm sick of pasta, I don't like sandwiches, and I don't want grilled cheese :/

How about Stouffer's frozen foods, they don't have preservatives, neither does Lean Cuisines and Celentano meatballs and ravioli. I make those a few nights a week when I need to make something quick. The Stouffer's Mac and cheese and Chicken pot pie and vegetable lasagna is the BEST!
I also like to get the Pillsbury pizza dough (in the fridge section it comes in a can like the crescent rolls) and I make pizza, it's sooo easy just need spaghetti sauce, mozzarella and anything else you want to put on it. Chicken nuggets, cut up, left over bacon, mushrooms, peppers, jalapenos, ricotta cheese, fresh garlic, etc.
Or chili, look up some chili recipes, it's so easy also, you just brown the meat add a few spices, a can of beans and just let it simmer for 2 hours! You can have that with tortilla chips, cheddar, crackers, white rice.
Tacos is great too, because whatever is left over I make burritos and put it in the freezer and take them out and pop in the microwave whenever I'm in a hurry to eat. Sometimes I make quesadillas with the leftover taco meat the next day.
I have lots and lots of ideas, but it would take me an hour to write it all...

How about whipping together a nice omelet? I do that a lot for dinner, sometimes with a little side salad. And sometimes I just make a plate of cheeses, artichoke hearts, salami, and that sort of thing. Or if you have a piece of fish in the freezer, nuke to defrost it and then broil or poach it - I do that a lot, too!
try making a day of cooking once a week or every two weeks--then freeze the results in individual serving size--this way you'll have many choices all the time

make a pizza yourself..be creative n its really fun and it can fit totally to your taste buds...

mix them all in a bowl and enjoy your tasty and easy to make and digerabil meal. Bon apetit!

For dinner we had OnCor chicken parmesan.
Though I cooked some fettucini and spaghetti sauce for it, you wouldn't have to do that.
Put a Chuck roast in a roaster or casserole dish and peel a couple of potatoes and carrots and onion put them around it and bake it for a couple hours.
Ingredients:
4 tablespoons olive oil, divided
2 tablespoons fresh lime juice
2 tablespoons grated lime peel
1 1/2 tablespoons honey
1/2 teaspoon salt
1/4 teaspoon (generous) ground chipotle chile pepper*
1 1 1/2-pound skinless salmon fillet, cut into 1 1/4-inch cubes
18 large sea scallops
2 dozen mussels, scrubbed, debearded
2 dozen Manila (small) clams, scrubbed
Cilantro Dressing Preparation:
Whisk 2 tablespoons oil and next 5 ingredients in small bowl. Arrange salmon and scallops on separate sides in 13x9x2-inch glass baking dish. Pour marinade over and toss to coat, keeping fish and scallops apart. Let marinate at room temperature at least 30 minutes and up to 1 hour, turning occasionally. Drain separately, reserving marinade.
Heat remaining 2 tablespoons oil in large nonstick skillet over medium-high heat. Sprinkle salmon and scallops with salt and pepper. Add salmon to skillet; sauté until just opaque in center, about 3 minutes. Using slotted spoon, transfer salmon to platter. Add scallops to skillet; sauté until just opaque in center, about 1 1/2 minutes per side. Transfer to platter with salmon. Pour reserved marinade into skillet; add mussels and clams. Cover and cook over high heat until mussels and clams open, about 3 minutes (discard any that do not open). Using slotted spoon, transfer mussels and clams to platter with salmon and scallops; cool to room temperature. Drizzle seafood with some Cilantro Dressing.
I love to cook so as far as easy gos , why don't you just fry yourself up a pork chop ( if you eat meat) steam some squash ( yellow and green ) and have a small baked potato . it may seem like a lot of trouble but believe me it will take less than 20 minutes and you can sit down and have yourself a nice meal and feel good about it. Don't you have someone who would like to take you to dinner ? I know I would , anyway whatever you decide have fun and enjoy.
Here are some things me and the boyfriend do, and some things my friends do--
Stir Fry- You can buy it frozen in the store.. Chicken Fried Rice, Cheesy Pasta, etc.
Tortilla Pizza's- Take soft tortilla shells, small ones are better, put them on a greased cookie sheet, spread pizza sauce on, sprinkle your favorite cheese, add pepperonis or whatever you prefer, bake at 300 degrees Farenheit for 10 mins or until cheese is melted
Reuben Sandwhiches- Just look up a recipe :)
******************CHICKEN DINNER FOR SINGLE COOK
1 chicken breast
1 pkg. or can undiluted cream of mushroom soup
1/2 c. water
1 tbsp. lemon juice
2 tbsp. sliced mushrooms
Dash of salt
Dash of sage
Wrap chicken in heavy duty foil. Combine soup, water, juice and mushrooms, sage and salt. Pour over chicken in center of foil. Bring 4 corners of foil together and fold and bring under chicken. Bake at 375 degrees for 45 minutes. If more than one eating add more of everything.
*************EASY TACO-CORN CHIP MEAL
Make your favorite chili or chili beans. Crush 1 large bag corn chips. Cover bottom of baking dish. Cover chips with chili (about 1/2 of it). Sprinkle with chopped onions as desired. Sprinkle with grated cheese or cheeses such as Velveeta, sharp cheddar or Mozzarella. Repeat layers.
Bake at 350 degrees about 15-20 minutes. Serve with salad or top each serving with chopped lettuce and tomato pieces and/or sour cream or salsa sauce. Experiment.
I know this is a little pricy but theres nothing wrong with a nice big steak and A-1 sauce, steak fries, and a shrimp platter with butter or your favorite seasoning. I know i love it especially with Chesapeake seasoning.

PORK CHOPS AND APPLES
2 medium unpeeled apples, sliced
4 tbsp. packed brown sugar
1/2 tsp. ground cinnamon
4 pork rib chops, 1/2 to 3/4 inch thick
Heat oven to 350 F. Place apples in a casserole dish. Sprinkle with brown sugar and cinnamon. Trim fat from pork. Spray a skillet with cooking spray; heat over medium heat 1-2 minutes. Cook pork in hot skillet about 5 minutes, turning once, until light brown. Place pork in single layer on apples. Cover and bake about 45 minutes or until pork is slightly pink when cut near the bone and apples are tender. Serves 4.
BAKED FLOUNDER AU GRATIN
4 large flounder (about 2 lbs.)
Salt (optional)
Juice from 4 lemons
1 c. dried breadcrumbs
1 c. shredded Cheddar cheese
12 tbsp. margarine
2 c. minced onion
Heat the oven to 375 F. Sprinkle salt (optional) and lemon juice on the flounder and lay in a non-stick baking pan. Cover the flounder with breadcrumbs, cheese, small lumps of margarine, and onion. Bake in the oven for 35-45 minutes or until fish flakes easily. Baste the flounder from time to time to keep moist.
EASY CREAMY MUSHROOM ALFREDO
3 c. Rigatoni or Penne pasta
2 tablespoons salt
4 c. sliced fresh mushrooms or 2 cans of mushroom pieces, drained (optional)
1 jar Creamy Alfredo Sauce
Salt and pepper to taste
4 tbsp. grated Parmesan cheese
2 tbsp. chopped fresh parsley or 1/4 tsp. dried parsley
Use a large pot with enough water to cover the pasta. Boil enough water to cook the pasta and add the salt to the boiling water. Cook pasta according to direction on the box. Drain. Meanwhile, in a large skillet over medium-high heat, heat the Alfredo Sauce. Add the mushrooms. Cook 5 minutes, stirring occasionally. Reduce the heat to medium. Toss the hot pasta, sauce, the parsley, and 2 tbsp. of the Parmesan cheese. Season with pepper. Place on a platter and sprinkle with the remaining Parmesan cheese. Serve with a green vegetable such as asparagus or broccoli. Have French or Italian crusty bread and a salad on the side.
IMPOSSIBLY EASY CHEESEBURGER PIE
1 lb. ground beef
1 large onion, chopped
1/2 tsp. salt
1 c. shredded Cheddar cheese
1/2 c. Original Bisquick mix
1 c. milk
2 eggs
Heat oven to 400 F. Spray or grease a 9” pie plate. Brown beef and onion; drain. Stir in salt. Spread in pie plate; sprinkle with cheese. In bowl, stir together Bisquick, milk and eggs. Pour into pie plate. Bake 25 minutes or until a knife inserted in center comes out clean. Serves 6.
Freeze leftover portions in individual trays (like TV dinners) and reheat when wanted.
I just grilled up some thin sliced rib eye steaks with garlic pepper and a little salt. Put them over a bed of brown rice and smothered it with sauteed onions and mushrooms. Balanced in out with a romaine salad with a raspberry walnut vinaigrette. All done in under 30 minutes start to finish.
i find that a good option is a bowl/s of cereal is good healthy and filling and you could enjoy it with a nice cold glass of tomato juice
