Rhubarb has a lot of Vitamin C and Fiber. After all, it is a fruit. However, the thing about rhubarb is that it is very sour. So a lot of people will pair rhubarb with lots of sugar. As long as you don't use too much sugar with your rhubarb (think pie), rhubarb is healthy.

It reminds me of my grandmother, who used to cook rhubarb pie. She is passed away now...I miss her sometimes...

Yes very. Good simply stewed and served with custard or rice puddings, or in tarts, pies, crumbles. Also with game meats, moose, venison etc. Tart & sweet. Picquant. Makes very good jams & preserves. It's a perenial member of the buckwheat family and the stalk is edible. The rhizome is used for medical benefits.
