Ground beef
It's any kind of meat you want to use. There is no right or wrong. When I make meatballs or meatloaf, I use a combination of hamburger and ground turkey. Sometimes I will use lamb or venison, it just depends on what is available at the grocery store.
I use hamburger and an italian sausage for spaghetti meatballs.

In my sauce - the meatballs are made from 1/2 ground beef, 1/4 ground veal & 1/4 ground chicken. It's all in the flavour.
