Does cheese really go bad?!

Question: i mean... once cheese gets past a certain point of freshness, doesn't it basically just become another type of cheese?

Cheese certainly will go bad if it isn't handled and stored correctly. And there is such a thing as simply being too old, though firm cheeses are not what you would call "fresh" to start with (they are aged for months or even years) and the presence of mold is not a reliable indicator that a cheese should be discarded. Certain molds are part of the cheese making process and you might very well find them as "bloom" on certain cheeses.

Cheeses don't magically start out as one kind of cheese and then turn into something else with perhaps the sole exception of cottage cheese - and even that takes some doing. What kind of cheese a cheese becomes depends on the kind of culture that was used, the kind of milk, how it was processed and much more.

Yes,once it is past its freshness,it will turn moldy!

yeah it does

It has an ugly apperance and tastes NASTY so throw away i dont want you ILL!!!!!

As long as you keep cutting of the outer layer it is still safe to it. The cheese will start to smell cheesier and taste sharper.
