I have had to do portion control with my past restaurant gigs. The only advice I can give is patiance and time will teach you what u need. Not the answer you are looking for but here is this. When cutting some meat what ever it is, try using 1 finger's width as a measurement. Use that number to tell u on that peice of meat what how many fingers u need to get to one pound. If its ground meat, guess, u can add or subtract easily. Sliced meat will help u alot to guess for the same reason. Good luck.
A size of a box of playing cards is 4oz, imagine four playing cards shaped like a window, thats a pound or a small fist is about a pound
Hi there... good luck to you for getting a job. If the people working there just think back to their first day, they would not have been so clever either. These things are learned by experience and being exposed to it for a while till your eye can judge roughly.
I would suggest that in a quiet time, maybe before you start for a few minutes, ask the boss if you can please measure out a pound of hamburger. Look at it. Then try to make all the hamburger purchased that day based on your knowledge. Next day, try cuts of other meats and do likewise. In experimenting we learn.
Best of luck to you.
Cheers
Lisa
You might try looking at the prepackaged meats and deli items to get an idea of how large they are vs. their weights. It will take time and practice. But you CAN get the hang of it. Don't be afraid to admit to people that you're new to the job. Because the meats are cut at many, many different thicknesses, we can't really give you many guidelines...just practice and remember what you learn as you go.
Good luck with your new job!
