Modified food starch?!
Answers: So much has modified food starch in it. Should those avoiding wheat (we're trying to figure out if I have an allergy) avoid modified food starch?? I read that it's derived from wheat, corn or potato, but not many products say which one. What should I do??
All foods should be labelled with potential allergies (at least, that's how it works in Europe) - eg 'contains gluten, lactose, nuts, may contain traces of soya' or similar. If it contains gluten then you should avoid it when cutting out wheat.
Personally I avoid anything containing (genetically) modified starch if I possibly can.

Yep, I would stay away from it if you are testing for an allergy.
In the US modified starches can be from wheat, corn or potato. The products generally aren't labeled which starch. My understanding is that some products use a combination.

I'd call the manufacturer of the products you really want to know about. They'll tell you.
Unless you call the manufacturer, there is no way to be sure. And even then, it could change from lot to lot. So the best thing to do is find a product that doesn't have any in it while you are allergy testing. If you go to Whole Foods or Trader Joes, a lot of their products won't have all the additives.
