Have you ever had the Chianti braised short ribs from the Olive Garden?!
Answers: I had it last night for the 3rd time in my life and I was in heaven!!!
I am a former chef and they are not hard to make, they are are a basic braised short rib dish, the Chianti is an add bonus, the difference between there dish and the one you can make at home is they make 30-50 portions, there veg and other ingredients.
I would think about what you saw in the dish, then check out you local stores for a good quality short rib, I like one that are 2-3 inches thick, I brown mine in a pan, add my veg (carrot, celery, onions, tomato product either whole canned, chopped and a bit tomato paste) and deglaze the pan with either stock and or wine, with the Olive Garden ones I would imagine they add a splash of balsamic vinegar for taste, then it is in the oven for a 2-3 hour slow braise.
I use a crockpot as it will keep them form boiling to hard and the meat is more silky, then you serve with your favorite pasta or rice, try to make them, it is a challenge to try and make them the same way, figure 1 piece of short rib per person, the leftovers can be used the next day in a baked pasta dish with a bit of tomato and cheese, very versitile meat.
