How much nutritional value is actually left in canned veggies?!
Answers: After whatever process is done to can them, is it still (nutritionally) worth it to eat them?
There are hardly any nutrients left in canned fruit and vegetables. It's not worth the effort, actually. Any vitamins and minerals that might be left after they are processed to put in the cans are totally wiped out by the extra chemicals and juices that are added to them in "preservation" efforts.
If you cannot find fresh veggies, frozen is your best bet. They are often flash frozen in their natural state in order to preserve as much of their nutritional value as possible.
Granted, they also go through a lot to get processed, but they're higher up on the food chain than the canned variety.

I can't tell you the difference, since I am no where near a kitchen at this moment, but you do get the most benifit from fresh, then frozen, then canned. The more that it is preserved the more sodium and other preservitives are in it.
