What are the best meals to eat in South America?!

In addition to local Indian cuisine, a lot of it will be heavily Spanish-influenced. I like to sample different restaurants' take on "mole" - a sauce of blended peppers and chocolate (it's not hot). You can have beef or chicken with mole sauce, they may have other variations.
Be open to new things (such as different forms of cactus as a veggie or sauce) as well as regional specialties (Argentina is famous for their beef; Chile has jumped to world attention for some of their wines), stick to bottled water or other beverages, and I'm sure you will have an amazing gastronomical adventure!
