What is the differecne between White meat and Dark meat?!


Question: I notice alot of people prefer to have white meat over dark. Like wanting chicken breat instead of chicken legs.

Generally the darker meat is fattier and richer. Some people are simply trying to cut their fat intake, some just don't like the taste.

The dark meat is more blood saturated than the white meat. Since chickens can only fly for short bursts they rely more on their legs to move. Because of this, there is a need for increased blood flow to that area. That is why the meat appears darker than white meat.

Color, texture, flavor, moistness. Those are the obvious differences. As a child, I preferred the white meat of the chicken and turkey. Now, I can eat any part of the chicken but would rather not eat the thighs, that meat tends to be more stringy and fatty than the rest. As for turkey, I don't really like it, but if I have to eat it, I still prefer the white meat.
