yellow rice and green beans and also cornbread.
I would go with some rice (Brown, but white is ok). I like to add fresh squeezed lemon to my rice. Garlic-lemon-pepper is good on fish! Maybe a lite salad with fresh greens, tomatoes, avocado, olives, sunflower seeds, olive oil and red wine vinegar.
Green beans, or asparagus lightly salted.
Rice Pilaff, greenbeans with garlic and lemon, and cheese biscuits....
BROWN RICE DELUXE
1 c. quick cooking brown rice
1 (3 1/2 oz.) can French fried onions
2 cans mushroom soup
1/4 c. stuffed green olives, sliced
1/4 c. freshly grated Parmesan or cheddar cheese
1 (2 oz.) can mushroom stems & pieces
1/2 c. milk
1/4 tsp. pepper
Cook brown rice according to package directions. Drain and place in a 2 quart casserole dish. Add the onions, mushrooms and olives (but save the juice from the mushrooms). Mix all gently. In another bowl, put the soup, milk, pepper and juice from the mushrooms; set all aside. When ready to bake, pour the mushroom mixture into rice mixture and mix all gently. Bake, uncovered at 350 degrees for 30 minutes. Then sprinkle cheese over the top. Bake 10 minutes more.
try some of uncle Ben's fast rice cooks in microwave in two minutes wild with herbs. or plain rice, roasted potatoes cut your potatoes into cubes cover with cooking oil and spices oregano Italian seasoning etc bake in over till tender, maybe even Alfredo.salad tossed or coleslaw.
Make a simple salad. Lettuce greens, carrot bitsies, those tiny tomatoes and a bit of cottage cheese in the middle. Actually, someone else already gave you the salad recipe, just remember to make it cute. Like, make a design or something. Circle and flower like stuff is what my dad does.
What I definitely suggest is you serve the fish on a bed of lettuce, but the dark, curly sort -- think like that stuff they use in restaurants. Just wash and place with the curly sides out. Pretty and effective! Also, serve rice, and/or bread with butter. Biscuits, of course. You can buy them, or make them (use Pillsburys, if you want, but keep a very good eye on the oven - a minute late and they'll taste slightly sour).
Don't forget a nice dessert -- I suggest Jello no-bake cheesecake, which is fast to make and pretty passable. Tell you did it the old-fashioned way, if you want.
Oh, before I forget - presentation is the most important thing. Set out the nice plates and silverware, candles, and tall glasses.
Good luck!
