it separates and the liquid rises to to the top. ground up mustard seed and vinegar mostly, sometimes some spice, garlic, onion powder etc.

oh it is when the liquid in the mustard seperates from the actual mustard. to stop it from happening shake it well every time you need to use mustard. i do that to everything.

...its just the water from the mustard.....the condensation that is formed at top of bottle from being in fridge.

That's a mixture of vinegar and water that separates from the mustard powder mixture; just like salad dressings that the vinegar and water sepaprate from the oil so you always have to shake it before pouring.
Mustard is made out of mustard seed, potassium, sodium, and water. When you squeeze the bottle before shaking it and he yellow watery syuff comes out that is just the water that got seperated from the rest of the mix so you should always shake the bottle before using it so you can mix everything up.

cause after a while, the oil from he mustard will rise up. because the oil is lighter than the mustard. so since the mustard is heavier, the mustard stays to the bottom, while the oil rise on top(because it has a lighter mass).
its just like vinegar and oil. the oil has a lighter mass than the vinegar, so thats why it rises to the top and the vinegar stays to the bottom(thats why vinegar and oil can never really mix)

That is what they mean by shake well. Once you don't, you will probably always remember to do so. I don't like it either.

Ketchup does the same. Shake them up before squeezing. I guess mustard is made from mustard seeds. The dried yellow cap mustard gets on the tip of the squeeze bottle is worse than the watery stuff!
