Why is there bubbly oozing out from my meringue cookies?!

Your meringue cookies are "weeping" because they have not been baked long enough. This happens sometimes when a recipe has not been tested well enough or when your oven is not correctly calibrated for temperature. You might also see this if you try to bake meringues in humid weather.

Decrease the temp on your oven by 25 degrees from what the recipe calls for, then when time is "up" turn off the oven and leave the door shut for an hour or so before you take the cookies out. They should be perfect and stay that way far longer than they will last.

It sounds like the moisture is weeping out of the meringue. Some moisture loss is to be expected. Refrigerate them to extend their "goodness".
