Oxtail is the more historic name, but is now generally taken to be the tail of beef cattle rather than just the tail of an Ox.... great for soups, stews and braising etc.
If you have it in food all you will taste is a strong intense beef flavour and it yields a wonderful thick gravy.
Commercially probably more used for soups and stocks. Too valuable for flavour to be disposed of in the same way as other less palatable bits used in fast food burgers and sausages etc.

they sell it under the name of ox tail, which is really very good, it is just like beef stew. I thought I would never eat it, but....I did and will again...

I pressure cook it with beef base, then put it in a pot and add carrots, potatoes (not peeled, just cut up), onions and big pieces of chopped cabbage, and cilantro (cut whole thing in 3 pieces, leave stalk on)
This is how the mexicans eat it, serve with corn tortillas. It makes really good soup!
Well, yes they use it to make ox tail but. . .how much spare time do you have to have to think about things like this?
