Does anyone have any tips for adding a good flavour to milk poached cod?!
Preferably healthy tips please, as I'm diabetic and very health conscious.
Answers: I tried it for the first time yesterday, and it was ok except it seemed pretty bland, so I was wondering if anyone had any tips or tricks on things that can be added to give it some extra flavour?

instead of normal milk, try coconut milk. bring to a simmer in a saucepan add ginger (or galangal if you can get it), tiny bit of chicken stock cube, fish sauce, lemongrass, basil, coriander, lime juice and zest and a small red chilli (chopped) if you like it spicy.
"Don't allow it to boil as the coconut milk will split"!.
Simmer for 20 Min's, strain, reheat and poach your fish in flavoured coconut milk. You should then have a tasty poached fish and also a Thai style soup (Tom Ka), serve with steamed jasmine rice or fried rice.
If you are health conscious you could use low fat coconut milk, the taste shouldn't be that different from a full fat one.
Not so sure how coconut milk affects you with being a diabetic.

Try adding a couple of bay leaves and an onion and some peppercorns.
Cumin or put sliced garlic between the fish.
Try add thinly sliced onion, carrot, leek and a bay leaf to the poaching liquid, plus salt and pepper to taste. When it's cooked you could if you wanted use the poaching liquid to make a cheese or parsley sauce. (2 oz butter melted in pan, add 1 dessertspoon cornflour, mix well, then add quarter pint or so of milk and bring to boil strring all the time. Add grated cheese, or chopped parsley and more seasoning if needed). The sauce might not quite fit in with your healthy diet, but it's very nice! Bon appétit!
Do what you always do but add this after you've placed the fish on your plate:
In a small bowl add the juice of a small lemon, 3 table spoons of olive oil, blend well. S&p to taste and add a tablespoon of finely chopped parsley. Whip up again with a fork and spoon over the fish.
Sprinkle with FRESH rosemary!
Then poach as normal.
before adding milk (toast) various nuts in hot dry pan to release natural oils (i believe almonds are great for diabetics) maybe add fresh vanilla bean? saute' onion-bell peppers with nuts ? check against ur diet ! add mild fresh parsly and enjoy
I would go with the Bay leaf and pepper corns, you could then use the milk to mash with some potatto to go with it.
Add some grated cheese (mild, mellow, stong, mature, extra mature) your choice and also some chopped up chives.
The taste is 'out of this world'.
well i suggest a touch of cayenne pepper or a touch of garlic salt and put a bay leave on top
Get undyed smoked haddock,or hake and steam it.Both have a better flavour than cod.
for a slight and subtle backround note try some black uncrushed peppercorns a bayleaf and a few stalks of parsley, for something more interesting a half teaspoon of garam masala or curry powder should wake things up nicely
