Hell yeah! The “rock” of cheeses, hard cheese lasts for 3 to 4 weeks after being opened, whereas soft cheese lasts for about one week after being opened.

You can keep it as long as you want if you use a seal a meal..no kidding. Trim off all freezer burn plus a thin layer, that is about all that will make it taste funky.
Cheese may get crumbly but melts fine for cooking in casseroles and stuff, key is to keep out freezer taste and any air. Way less likely to freezer burn that way as well.
