Frank's Louisiana Hot Sauce is an excellent substitute for tabasco.
For the salad, you can use red wine vinegar or try any of the dressings below.
TARRAGON VINAIGRETTE
2 tsp. Dijon mustard
2 tbsp. red wine vinegar
2 tbsp. fresh lemon juice
1 tbsp. finely chopped shallots
1 tbsp. extra virgin olive oil
2 tbsp. freshly chopped tarragon
salt to taste
freshly ground black pepper
In a small bowl, whisk the Dijon mustard, red wine vinegar and lemon juice together. Add the shallots and slowly whisk in the olive oil and tarragon. Season with salt and pepper to taste. (The vinaigrette can be made in advance and stored in the refrigerator for up to 5 days.)
NORTH WOODS INN SALAD DRESSING
1/2 c. vegetable oil
1/2 c. plus 2 tablespoons red wine vinegar
3 tbsp. sugar
1 tsp. Lawry's seasoned salt
1/4 tsp. black pepper
1/4 tsp. onion powder
Whisk together the oil, red wine vinegar, sugar, seasoned salt, pepper, and onion powder. Let stand for several hours before serving. Makes 4 servings.
AVOCADO DRESSING
1 large ripe avocado, peeled, mashed
1/2 c. dairy sour cream
1/4 c. milk
1/4 c. mayonnaise
1 tsp. lemon juice
1/4 tsp. garlic salt
2 drops hot pepper sauce (optional)
In small bowl, combine all dressing ingredients; beat at low speed until smooth. Cover and refrigerate for several hours to blend flavors.
