I don't know which is healthier but I know what taste better and that's the charcoal cooked food.

Neither.

Both propane and charcoal turn dripping fat into carcinogenic chemicals.

In-direct cooking (where the meat is not over a flame) is probably the healthiest. Horizontal smokers allow this. And the smoke (from clean good wood, of course) kills surface bacteria. The cooler temperature of a water-smoker yields a much more tender finished product.

Boiling also doesn't contribute to carcinogens, but then, hey, it doesn't contribute to taste, either.

Have fun!

Charcoal stuff tastes better to me. I don't BBQ often enough to worry about carcinogens. Now and then have a picnic style meal off the grill.
