Mushrooms are not a starchy vegetable. They are vitamin rich and low on carbs and fat. You can enjoy them without concern about getting too much carbohydrate into your diet. If you are looking at starchy vegetables you need to look at potatoes, yams, pumpkin, peas, beans, lentils and things like that.
