I'm a single mom in the evenings and weekends so I never have time for a gourmet meal (two hungry mouths wailing when I get home)

1lb 21-30 ct shrimp deshelled/veined
(I don't measure, so bear with me)

veggie oil, soy sauce, garlic powder, black pepper, honey, and lemon juice. Make a marinade and let sit for a while 10 minutes at most.

While shrimp is marinating, make some pasta (you know how much your family eats.) In the last three minutes, toss in raw broccoli flowettes. Drain. Add a little butter/margarine/olive oil to the pot the pasta was in, and sautee your shrimp with garlic, black pepper and whatever other seasonings you like (discard the marinade) until the shrimp are cooked, toss the pasta/broccoli back into the pot and toss to coat. Takes me about 20 minutes from start to finish. My kids eat it, and are still getting their veggies.

Or you can grill the shrimp and toss over rice.

My kids also like stuffed pepper stew, meatballs and LOVE tacos. I usually prep everything either in the morning or the night before (usually the only time I get a chance if I make something that needs more time) or I use the crock pot (best invention EVER for a working mom!

I make these recipes often too:

Hope these help a bit!

Here's a quick soup recipe:

2/3 c. red lentils
4 c. chicken or veggie stock
1 can tomatoes
1 tsp. cumin
1 tsp. thyme
1/2 c. dried apricots
1 onion, peeled and coarsely chopped

Saute the onion in a little oil, add lentils, tomatoes, stock, and apricots. Bring to a boil, then reduce heat to a low simmer, cover, cook for 25 minutes, until everything is tender. Add spices. You can put it in the blender for a smooth texture if you desire. Salt and pepper to taste.

It sounds peculiar, but my kids (ages 6 and 9) love it, and so do I.

What kind of foods do you cook with? Chicken, beef, pork? Vegan?
How old are your children?

I eat raw food so I don't cook at all. My favorite foods are fresh squeezed orange juice (I could just about live on it), tomatoes, cucumbers, huge salads with KELP NOODLES! In the summer give me mangos and watermelon and I'm happy.
