Veal Parmesan. I make all three at home because I prefer my own cooking. Italian restaurants make very nice veal.

    VEAL! I'm tired of chicken and don't like eggplant. But I love veal!

    CHICKEN, then eggplant... I don't eat veal.

    Chicken Parmesan....but I never order it when I go out because I use my Mom's recipe and it is always better when I make it myself. I just personally prefer her recipe, plus I am watching what I eat, so I know exactly what goes into my recipe and I can control the different levels of salt or whatever.

    PARMESAN CHICKEN


    6 chicken breast, boneless and skinless
    ? cup flour
    2 eggs, beaten
    l-1/2 cups dried bread crumbs
    ? cup oil
    2 can (16 ounces) tomato sauce
    1 teaspoon oregano
    8 ounce mozzarella cheese, grated
    ? cup Parmesan cheese

    Pound chicken until thin. (This step can be eliminated if you want.) (Pounding the chicken makes it tender.) Coat with flour, shaking off excess. Dip in egg, then bread crumbs. Press in the breadcrumbs. Refrigerate for at least 30 minutes. In a skillet cook chicken in oil until brown on both sides; drain on a paper-towel lined plate. Transfer to a 9x13-inch baking dish. Bake 30 minutes at 375. Mix sauce and oregano; pour over chicken. Bake 15 minutes more or until juices run clear. (I cut the chicken with a sharp knife to make sure it is done.) Sprinkle mozzarella and Parmesan cheese over top of chicken. Cook 5-10 minutes more until cheese is melted.

    YIELDS: 6 servings
