If I made pancake batter, how long can it stay refrigerated before I have to throw it away?!

I'd say don't keep it longer than overnight. (ie, if you made it the night before and didn't use it the next morning, toss it out).

Usually 48 hours or less is safest. Try to refrigerate what you will not use as quickly as possible to keep contamination to a minimum. Raw eggs and milk in the mix make it questionable after 48 hours - toss it after that.

it is always best to mix the pancake mixture if and when you will be cooking pancakes within the hour. pancake mixture is not advisable to be in the refrigerator for more than 24 hours. the eggs will spoil and the mixture will become watery. to get good consistency with pancake batter, always beat the egg yolk separately with the egg whites..you will notice the difference in fluffiness and taste

I've found that after one day it gets too funky to eat.

I have used it after 2 days BUT I have a not-so-secret recipe where I add this to the mix just before pouring in the skillet:

1 tablespoon sugar
2 tablespoons lemon juice
2 teaspoons baking powder

Makes them light and fluffy!! YUM

Unless you freeze it, I would say three days, maybe four at the most.

Not any longer than three days.
