The name of a french cheese?!

Question: A few years ago while I was living in France, I had a piece of delicious cheese but I can't remember the name. I got the whole story from the cheesemonger who sold it to me, because you know the French, show a little interest in their culture and you'll end up with an entire lecture ;-) The same type of cheese is also made in The Neatherlands, but the French version is dyed red in rememberance of all the lives lost in the wars with the Dutch. I think it was a hard cheese. Does anyone know the name?

Commissiekaas in Dutch
Mimolette en fran?ais
