Why is peanut butter brown but peanuts are white?!

I'm pretty sure peanuts are more of a tan-beige color

As jill said above, peanuts are roasted before they are ground into peanut butter. That turns them brown. The same thing would happen if you put a raw peanut into a toaster oven. My guess is that the peanut skins are also included in peanut butter and that would make it even more brown. Most peanut butters also include sugars like molasses, which is brown.

They're more tan, but when you roast them to make the peanut butter, they turn darker.

Raw peanuts from the ground are more white in color because peanut butter is made with roasted peanuts and preservatives.
