Definitely buy a mix and prepare the cupcakes yourself. It would also be best to prepare a homemade frosting. Premade cans of frosting are loaded with trans fat (which is bad for anyone) and you don't know exactly when/where/by whom the store bought cupcakes were made. Most premade baked goods contain some sort of preservatives. By making the cupcakes yourself, you know exactly what is going into the mix and you can modify the recipe to meet your standards.

Try this great frosting recipe. It's very simple and delicious!

Buttercream Frosting
4 cups powdered sugar
1 cup unsalted butter
1 teaspoon vanilla extract
3 tablespoons milk
--Cream together sugar and the butter. Add the vanilla. Add the milk and beat on a medium speed until it is a spreading consistency. If needed add additional milk, 1 teaspoon at a time until desired consistency is reached. Tint with food coloring pastes until you reach the color you like.

Enjoy!

Doesn't matter. Store bought cupcakes are generally arrive frozen and baked to optimal temperature before being frosted and put on display. Your 1 year old isn't going to notice the difference. However, it's a matter of whether or not you have the time to bake them from a mix.

By store-bought do you mean a "bakery" like that in CostCo, Safeway, or the like? Generally speaking, that type of commercial bakeries do rely on mixes to make their cakes. Unless you're purchasing from an upscale or natural/organic bakery, there's no guarantee of a superior product as compared to making your own from purchased mix. One exception is in the frosting. Bought frostings are normally full of trans fat. If you make your own from real butter, you control at least that aspect.

However...eating that stuff once a year, for a birthday...I don't see that as doing serious damage. It's the regular consumption that's harmful

[Edit: ha*ha*ha, do you know that all major brands (Pillsbury, Betty Crocker, etc) of cake mix contain dry partially hydrogenated shortening in the dry mix? That means trans fat. Natural cake mix is available if you're willing to seek it out and pay the extra]

Probably 6 of one and 1/2 dozen of the other. I prefer the package mixes and I can make them when I feel like it. I never put icing on their cupcakes 'till they were much older. Actually, I made more muffins than cup cakes. Frozen them and took them out when I needed one or two.
