Obviously, it depends on the size of the cow but I found a site that suggested that the average loin (which is the part of the cow that gets cut into either T-bones and Porterhouses or tenderloin and short loin steaks) is around 15 lbs for one side. The size of each steak will vary, particularly if you request particularly thin or thick steaks from the butcher but I'd guess an average is about 1.5 lbs realizing that there will be some variance between the smaller end and the larger end of the loin. That brings roughly 20 steaks per cow split between T-bone and Porterhouse based on the size of the tenderloin section of each steak.
