When i was little they used to leave the skin on a fresh ham and it would be all crunchy when my mom cooked it. My dad who has passed would always give me the first piece of that tasty, crunchy pork skin cause he didnt want me to burn myself. Thanks for bringing back a wonderful memory . Im 48 now and cant find the fresh hams like that anywhere. They cut the skin off.
