Question: i have to think of something to make for dinner. but no meat! no pasta.
i cant think of anything.

Eggplant parmessan or Portabella Mushroom parmesan.
served with rice and grilled asparagus.
Just put the eggplant or mushroom on the oven at 350 for 20 min with tomato sauce and parmesan cheese on it.

Throw together a bunch of random vegetables in a pot and simmer in a little bit of water (to cover bottom) to desired tenderness. Either make a sauce from scratch or toss in a can/ jar (however much you want) of a prepared sauce.
This works really well in a crockpot . . .

frittata - its an italian omlette - put whatever veg you have in the pan, throw beaten eggs and milk in, stir til eggs look scrambled, stick in the oven on medium heat. top with cheese and sliced tomato. hundreds of recipes online but thats basically it!! great with salad, very tasty, filling, healthy!!

how about ....melazano.....eggplant,squash and zucchini cut into squares and slow cooked in a marinara sauce; tomato sauce, olive oil, fresh basil, minced garlic and salt & pepper it's a great meal.

cheese pizza.... tofu...idk

You can try slicing yellow squash and zuccini. Put them on a baking tray and sprinkle ground pepper and ground sea salt. Sprinkle some extra virgin olive oil on it. and bake it until it is done. This is so delicious. If that doesn't work you can try eggplant. however eggplant requires flavoring, it is a bit meaty, but it's not. It needs flavor.
