Why does the cheese on a pizza taste strange sometimes after reheating it?!
Answers: It's only day-old pizza and has been refrigerated. It seems like the cheese changes texture and tastes different. Anyone know why?
Christina's answer is closest to the truth. The heating process releases the fat in the cheese, which is why hot pizza appears so oily on top.
Cheese on a cold or reheated pizza is chewy because the fats are out of the cheese and only the hard stuff remains.
Because when it gets old, the cheese releases enzymes and toxins that mean it's starting to rot, even if the pizza's only a day old.
i think it's b/c the heat pulls the grease and buttery goodness out of it originally, and when you re heat it, it's....gone! hahah :P I'm not really sure, but I def. have to agree that it's best to put it back into the oven, even if it takes longer.

Try using baking soda to absorb odors in your fridge.
I think it has something to do with the oil that is heated and then cooled. Once you reheat it again it changes consistency. I think, but not sure.
because cheese does that, so eat the pizza cold the second day, much better!
Children are starving in Africa and would be grateful for just one Pepperoni, so I think you should just eat it and like it.
All the oil has come out of the cheese from the first heating and is sitting on top of the pizza. It doesn't reabsorb so it congeals in the fridge.
I don't know.. but I do know what you mean. I have no idea why it does that. To reheat pizza put pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy microwave pizza.
