Cauliflower & cheese how do i make the cheese sauce i know you can buy packets but i want it fresh?!
Answers: i make my cheese sauce like this get a saucepan melt some marg or butter about 4oz when the marg or butter has melted add 5oz of S.R flour mix well then add enough milk then add your grated cheese mix well all together there you have it fresh cheese sauce

About a cup of milk. 3 teaspoons cornflour stir it into cup of milk and heat in microwave. Stir and stir now and again till thick. Add grated cheese , salt and pepper and voila you have your cheese-sauce. Remember you have to watch it carefully as it boils over quite fast.:)
Flour or cornflour,butter..Mix together over low heat,slowly add milk to required texture,add grated cheese..I like to add Worcester sauce to mine too...............

melt a knob of butter ina pan add some flour stir constantly until you have a paste add some double cream add some grated cheese of your choice keep stirring let it simmer add salt and pepper let it simmer for 3-4 minutes pour over the cauliflower sprinkle on some more cheese a little touch of cinamon over the top that is of course optional but it does make it yummy pop that bad boy in the oven for approx 20 minutes and wow the best damn cauliflower cheese you will ever have good luck :-)
600ml (1 pint) Milk, warmed
110g (4oz) Cheddar or Cheshire Cheese, grated
40g (1?oz) Plain Flour
40g (1?oz) Butter
Ground Nutmeg
Cayenne Pepper
Melt the butter in a saucepan over a low heat.
Take off the heat and stir in the flour. Cook gently for 2-3 minutes.
Remove from the heat and gradually add the milk, stirring constantly to avoid lumps.
Bring to the boil, still stirring, simmer for about five minutes, stirring occasionally.
When smooth and creamy, stir in the grated cheese a little at a time, until melted.
If the sauce is too thick, add a little extra milk.
Season to taste with nutmeg and cayenne pepper.
melt 2 ounces of butter in a sauce pan add 2 ounces of plain flour and cook without colouring this is called a roux now you need to add warm milk slowly into the pan stirring all the time so no lumps are formed a whisk may be used if you are not used to making sauces you will need about a half a pint of milk now you need to cook out the sauce until it looks shiny and has no lumps if you like you can add mustard and a pinch of nutmeg to the sauce add as much cheese of your choice ( remember cheese is a fat so its your hips that the fats going on to ) season to taste and hey presto home made cheese sauce better than packet any day and no additives
You want a basic white sauce known as Bechamel
Start to finish 15 minutes makes 1 1/2 cups
Ingredients:
2 tablespoons butter
2 tablespoons all purpose flour
1/4 tsp salt & dash of black pepper
1 1/2 cups milk
1. In a small saucepan melt butter over medium heat. Stir in flour, salt & pepper. Stir in milk and cook and stir over medium heat until thickened and bubbly. Cook & stir for 1 minute more.
For cheese sauce: Prepare as above exept omit the salt and over low heat stir 1 1/2 cups of shedded American, processed Swiss or Gruyere or cheddar cheese and stir.
This Bechamel is your basis sauce to which you can add herbs-garlic, curry, or lemon-chives.

cook out for a couple of minutes, slowly add hot milk, stirring constantly, bring to the boil and simmer for 5 minutes to cook out the flour taste. This makes a basic white sauce.
remove from heat and add grated cheese, it will melt into the white sauce making a delicious cheese sauce, great for cauliflower cheese, macaroni cheese etc.
Milk to simmering but not boiling. Add onions if liked and grated cheddar or similar. Allow the cheese to melt then add some cornflour or potato flour to thicken, stirring all the while. And of course some salt and pepper.
I use a jar of Kraft CheeseWiz. You can find in in the cheese section at the grocery store. It's creamy and all you do is spoon it over your cooked cauliflower.
