i think it would be interesting, any small noodles you like should be good for mac & cheese.

fiori would be good as a cold pasta salad with other pasta like spirals.

Personally I wouldn't use fiori with mac & cheese. It's too fragile. I'd just toss it with a light sauce like pesto.

I never tried making Mac & Cheese like that before, but it sounds like it would make an interesting flavor.
