What is everyones favorite cheesecake topping?!
I worked with the pastry chef when I was a sous chef in Singapore and we made some with tropical fruits like strawberries and lychees, rambutans and many more. I am not much for sauce or topping but if I can find a good one I will have it.
Answers: When I was a chef in Canada I worked in the western provinces for a few years, we used to get a type of blackberry called Marionberries, to make it I would carmelize some sugar, add a dash of red wine vinegar (something most would not think of) lemon juice and 2 bags of the frozen berries, we could hardly keep it in the place.
