Does freezing pesto help it keep longer?!


Question: i opened some pesto from trader joes tuesday afternoon (it's wednesday night).

1.) How long will it last?

2.) if i stick it in the freezer, how long before i can't eat it?

I always freeze my homemade pesto. It lasts forever. I line up tiny paper condiment cups on a cookie sheet, drop in about 1 Tablespoon pesto to each cup, and pop into the freezer. When they're hard, I dump them into a gallon-size freezer ziploc with the date written on the bag. They thaw very fast, because of the small size. You can take them straight from the freezer to pot of freshly cooked and drained pasta. I once found two or three little cups in a forgotten bag at the back of the freezer, over a year old and it still tasted good. No ill effects to me, either! Pesto has a long shelf life anyway, with all of its garlic, salt and oil - natural preservatives. Once opened, refrigerate or freeze.

If you put it in the freezer it will keep in there for about 1 month

However you will have to defrost it before you can use it again but it shouldnt take long if you stand the container in another container of hot water. Or put it in a microwave suitable container before you freeze it so you can defrost it in the microwave
