Quick and easy dinners?!


Question: I work a full time job, and by the time I get home I am pooped. I am 4 months pregnant, and my boyfriend has an odd hours job, so sometimes he is home at a decent hour and sometimes he isn't. Anyway I just was wondering if anyone had any quick and easy dinner recipes. I dont have a lot of money to keep spices and things like that on hand so no fancy stuff. Just quick and easy.

chicken and dumplings
5 boneless chicken breasts, cut into bite size pieces
2 cans cream of chicken soup
small onion, diced
1 chicken bouillon cube

2 cans of biscuits

in the crock pot combine ingredients, except biscuits. cook on low for about 6 hours
30 Min's before serving cut up biscuits into pieces and add to mixture in crock pot, stir up . cook for another 30 minutes turning the crock pot to high setting. Serve

frozen meals in a bag - bertolli or viola
try a crock pot, you can make lots of things and they are hot when you arrive home
plan ahead and cook in advance and then refrigeratemeals

My fave cheat is brocolli & lemongrass pasta. Cook some pasta. Mix a small tub of double cream with a couple of teaspoons of that ready-mashed lemongrass and a bit of salt & pepper (and half a teaspoon of sugar if it's not already added to the lemongrass). Steam or boil or stir-fry some brocolli and a red pepper for about 4-5 minutes, then mix up with the pasta and the cream mix. Add some fresh coriander and chopped spring onions (scallions?) if you can be bothered, and the juice of a lime. Heat it all together for about a minute. Only takes 10 minutes cos you can do all the other prep while the pasta is cooking. Plus if you're pregnant, you're probably allowed to eat all the cream calories without feeling too guilty...

Great Site Loved Them!! Easy and Quick

Okay, here's one of my favorites...it only takes a few minutes to prepare, and can sit in the oven for quite a while, in case schedules are tricky. I call it Mexican Lasagna.

Use an 8 x 8 cake pan (a pie tin will also work, but I prefer the straight edges of the cake pan)

* Start by putting one soft-taco/fajita sized tortilla in the
bottom of the pan.
* Spread refried beans on the tortilla (I use 1/3 of a can for
each layer)
* Sprinkle on your favorite ingredients or leftovers (I have
used bacon, tomatoes, green onion, white onion, chicken,
olives...whatever you have in your kitchen is great).
* Sprinkle on a little grated cheese
* Add another tortilla and repeat the process

When everything is assembled, open a 19-ounce can of enchilada sauce, and pour it over the casserole. I usually use a butter knife to go around the edges of the tortillas to be sure the sauce has gotten to the bottom of the dish. I also like to sprinkle on a bit more cheese, but that's obviously optional.

Bake at 375 until the top is bubbly. Let sit 10 minutes after baking, and slice into pie-shaped servings.
