Best way to store Colby cheese block so that it will not mold?!
Answers: i wrap it tightly with plastic wrap, but it still gets moldy in about a month in the refrigerator. i know i can cut off the mold and use the rest, but i was just wondering if there is a better storage method.
The method you're already using---tightly wrapping in plastic---is really the best way. But even the best-preserved food, including cheese, won't last a month that way. Once you opened the original packaging, the damage is essentially done: air (and therefore bacteria) have landed on the surface of the cheese. Even in a refrigerated, low-air environment (the plastic), the bacteria (and yeast spores, and other organisms) will grow and reproduce.
The best you can do is to cut the larger block into several smaller, more manageable pieces. Freeze what you don't intend to use immediately. NOTE: when you do pull more cheese out of the freezer, don't remove the plastic wrap until the cheese has thawed. If you do, moisture will condense very quickly on the surface of the cold cheese...that can contribute to faster spoilage.

I believe I do the same as you, tight plastic wrap, then heavy tinfoil.......cut of the mold, which is natural, and serve.
I freeze it, cut off what I want. Then back to the freezer.
