Answers: extremely rare as the taste is superb. and have the steak out of the fridge a few hours before you cook it keep it next to the cooker so it warms up and is not going to be cold in the middle but you have to keep it covered and as for bacteria remember on steak as long as it is fresh the bacteria are on the outside and are killed off by the high heat used in cooking it so no problems with e coli i have mine with a few nice mushrooms and a crisp green salad

Rare. But I draw the line at 'bleu' (blue). In France if you ask for 'rare' it's sometimes 'blue' which seems to mean that they take a frozen steak, show it the grill, but don't actually put it under the grill, and then serve it. I swear it's sometimes still cold in the middle!
