Is crust really the healthiest part of bread?!


Question: When I was little, my parents always told me to eat the crusts of my bread because "that's where all the nutrients are", etc. Is it true, or was it just a scam to get me to eat my crusts? Now that I think about it, crust is just the exact same dough that has been toasted a bit more on the outside... so it should be the same unless the toasting chemically changes it somehow.

but if you get farmhouse bread of something, seeds are on the crust, therefore crusts are better for you

i dunno...im a bakery manager and i dont know...now i will set out to figure it out!

Oh jeez. The crust is made out of the same stuff as the rest of the bread it has a different color and texture because of the baking process which exposes the exterior of the loaf to direct heat, causing it to toughen up a bit and brown compared to the interior. This is like saying that the pages in the middle of the book are less papery than the pages at the beginning or the end. They're all made out of paper.

I think that they just wanted you to waste not it's all the same ingredients.
